City Market Sandwich Shop Fuses Differing Cuisines

Chef Carlos Mortera didn’t want to open another taqueria so, he opened a sandwich shop called The Bite in the City Market.
“I always wanted to open a sandwich shop,” Mortera said. “I thought about Mexican flavors … and I always loved Korean food.”
Señor Chang was the very first sandwich on the menu, inspired by none other than leftover Korean food that he slapped between two pieces of bread.
The meats, stews and spices in Mexican and Korean food just matched, so that’s what The Bite is – a Mexican-Korean fusion restaurant. And its location is also unique, the chef said because it has a “different feel than other parts of (Kansas City).” The historic City Market reminds him of the markets in Mexico City.
